• 1 Large Chicken Breast
  • 1 Cup Chopped Pumpkin
  • 1 Cup Chopped Sweet Potato
  • 1 Cup Chopped Potato
  • 1 Cup Chopped Carrot
  • 1 Red Onion cut into Wedges
  • 500g Kale
  • 1/2 cup of Couscous
  • Olive Oil
  • 3 Tablespoons Dried Thyme
  • 3 Tablespoons Paprika
  • Yoghurt
  • Lemon

    1. Cut Chicken into bite size pieces.
    2. Mix 3 Tablespoons of Olive oil, Dried Thyme and Paprika in bowl. Add Chicken. Cover and place in fridge.
    3. Place Pumpkin, Sweet Potato, Potato, Carrot, Onion, and Kale stems on a baking tray and bake at 180 degrees until crispy and caramelised. Approximately 30-40mins depending on oven.
    4. Cook Couscous following packet instructions.
    5. Cut lemon into wedges.
    6. Cook Chicken in a frying pan with a little drizzle of olive oil.
    7. With 10mins to go on vegetables, place kale on top of vegetables. Kale will become crispy.
    8. Combine Chicken, Vegetables and Couscous into a bowl. 
    9. Serve on a plate drizzled with yoghurt and a lemon wedge.
