• 200g raw cashew nuts
  • 50g almond meal
  • 1 cup desiccated coconut
  • 1/4 cup organic cold pressed coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 3 Tbs maple syrup
  • 1 Tbs honey
  • 2 Tbs vanilla protein powder


  • 1/4 cup organic cold pressed coconut oil
  • 1 Tbs maple syrup
  • 1 Tbs honey
  • 2 Tbs tahini, room temperature
  • 2 Tbs cacao


  1. Combine cashew nuts, coconut, almond meal, salt and protein into a food processor.
  2. Process for a few seconds or until the mixture looks like fine golden crumbs.
  3. Add vanilla, maple syrup, honey and coconut oil.
  4. Mix until the raw lamington comes together.
  5. Roll into small balls and set aside.
  6. Place coconut oil into a small bowl and sit over some hot water for a few seconds until it melts. Once melted remove from the heat.
  7. Add the rest of the ingredients from the dipping sauce (organic cold pressed coconut oil, maple syrup, honey, tahini and cacao) and mix well.
  8. Dip Lamington Bites into the dipping sauce then roll into coconut.
  9. Store in the fridge (covered) for up to 1 week.
